Elsa: The first Organic Restaurant Being Awarded a Michelin Star

The Monte - Carlo Beach is now part of an elite group of great French and Monegasque restaurants thanks to the talent and creativity of executive chef Paolo Sari.

Being awarded a first Michelin Star for Elsa is a guaranty of quality, a reward heralding a future close to nature, a philosophy defining it as the first certified 100% organic restaurant. Danièle Garcelon, Executive Director, has put all her energy into the revival of “Beach goes Bio” together with Paolo Sari, who introduced an innovative, avant-garde culinary style, and an impeccable biological vision, well adapted to the Société des Bains de Mer values and customers requirements. In two years as head of the property kitchens, Paolo Sari, the 45 year old Venetian chef has achieved an unusual and exceptional career launching the concept ” Beach goes Bio ” in 2012, while obtaining the level 3 ECOCERT label and managing 75 cooks in 5 Monte Carlo Beach restaurants (Elsa, the Deck, La Vigie, Cabanas, the Sea Lounge). This is also a reward shared with the chef and his team, including the entire Monte-Carlo Beach Relais & Châteaux staff. The gourmet restaurant Elsa is named after Elsa Maxwell, the Societe des Bains de Mer's first ever PR executive, who organized the inauguration of the Monte-Carlo Beach.

L’Elsa is the first gastronomic restaurant in the PACA region which has received the Bio (organic) certification by Ecocert, French leader in Organic conservation certification.
